Barista Skills is for people focusing on the key skills required to set your grinder, make espresso and foam and texture milk for cappuccinos. This module allows you to gain a deeper understanding of the coffee itself and build on your practical skills for milk technique and latte art, not to mention health and safety, customer service and basic business.

The Barista Skills curriculum covers the following subjects:

  • Coffee beans – varieties, origins, composition, freshness
  • Workspace management – café layout and workflow
  • Grinding, dosing and tamping – type, use, impact on taste and efficiency, external influences
  • Extraction and brewing – espresso parameters, preparation, impact on flavor and body, measurement of extraction, the SCA Flavor Wheel
  • Milk techniques – milk composition, freshness, foam techniques
  • Barista menu – SCA drinks definitions and standards, menu design
  • Hygiene, health, and safety – policies and procedures, risk prevention
  • Customer service – personal presentation, communication, complaints procedure
  • Cleaning, maintenance, troubleshooting, and water – good practice, preventative maintenance, water parameters
  • Café management (Intermediate and Professional only) – price, profit, supply

Foundation is for people new to the coffee industry and focuses on the key skills required to set your grinder, make espresso and foam and texture milk for cappuccinos.  No previous barista experience is required for this course;
